Fall 2014 Catering Buffet

Our September 9th tasting was a huge success! In case you were unable to attend, we thought we’d share some highlights from the night. We partnered with the Mead Center for American Theater, Home of Arena Stage to host this month’s tasting.

The night began with some of our favorite + some of our new passed hors d’oeuvres including our Braised Short Rib Spoon with Beet Horseradish Foam, Pork Belly Wedge Salad Bite, Truffle Chicken Pot Pie, + Jerk Chicken on a Sweet Potato Rusk. One of the hits from the night was the Crispy Shrimp: BBQ marinated + grilled shrimp skewer with rice crispy crust. At the bar guests could quench their thirst with our Bourbon Peach Ice Tea or Chambord Bubbly.

We unveiled new station that evening: A Savory Waffle Station. Guests started by picking either a Honey Sriracha or Cheddar Thyme waffle + the butter of their choice, Truffle, Orange Honeycomb, or Beet Horseradish. Then our chef placed a Panko Crusted Chicken Thigh, Braised Short Rib or Roasted Butternut Squash Cube on top. Guests then topped it off with Spiced Pepitas, Bacon Salt, Crispy Kale, Fried Shallots, Crushed Peanuts, Espelette + choose from a selection of sauces.

The buffet offered a location for guests to serve themselves + taste some favorites including the Red Snapper Ferrara, Jack Daniel’s Seared Top Sirloin, Tortellini Alla Porcini, Farro Butternut Squash Risotto + Arugula Salad With Grilled Pear And Dried Figs.
